Locust Bean Gum - Organic

Locust bean gum, also referred to as carob bean gum, is a fine white powder extracted from the seeds of the Ceratonia siliqua, otherwise known as the carob tree. This material is soluble in hot water and can transform into a gel when combined with other ingredients such as carrageenan or xanthan gum. Locust bean gum yields a mildly sweet flavor with a similar yet subtle chocolate taste. Mainly procured for food and beverage manufacturing, locust bean gum acts as an emulsifier while also improving the texture of a formulation. Common consumables utilizing this raw material include ice cream, yogurt, sauces, baked goods, and dressings.
