Organic Chocolate Chips – Bittersweet 70% are a natural chocolate used in various culinary and food and beverage manufacturing applications. The 70% notation indicates the actual amount of cocoa derivatives in the chocolate with sugar comprising of the remaining 30%. The higher the percent of cocoa derivatives in a chocolate, the less sweet the chip will be which impacts the flavor of the end product. This variety of organic chocolate is in small chip (drop) form with a weight measurement of 1M meaning 1,000 chips per 1 pound.
