Locust Bean Gum, also referred to as carob bean gum, is mainly procured for food and beverage manufacturing. Locust bean gum acts as an emulsifier while also improving the texture of a formulation. Common consumables utilizing this raw material include ice cream, yogurt, sauces, baked goods, and dressings. In addition to improving texture, locust bean gum can increase the creaminess of a product and prevent crystallization in frozen desserts.
