Fish oil (33% EPA/22% DHA) is a popular oil used in dietary supplements as a source of the popular omega-3 fatty acids, EPA and DHA. As the omega-3 fatty acids in fish oil have been identified as a substance of interest, a sector of the consumer population has demanded more concentrated forms of omega-3. To meet such a demand, the fish oil is fractionated through molecular distillation in order to concentrate the fatty acids EPA and DHA. Since triglycerides do not fractionate well, they are first transformed to ethyl esters and then fractionated to concentrate the omega-3 content.
