Organic Cocoa Liquor, also referred to as cocoa mass or cocoa paste, is produced by finely grinding roasted cocoa beans to a smooth liquid state and then cooling and forming into blocks or wafers. Cocoa liquor is also known as unsweetened baking chocolate, although it does contain 3 grams of sugar per 100 gram serving. Cocoa liquor carries a mild characteristic aroma and is used in a number of food and beverage formulations.
