Canola oil of the Non-GMO High Oleic variety is expeller-pressed from selectively bred canola plant seeds to yield a higher oleic fatty acid content. After a thorough non-chemical refining process, the versatile oil exhibits a clear yellow appearance with a neutral aroma and flavor profile. Canola oil is widely procured for food service production and large-scale food and beverage manufacturing due to its cost effectiveness, consistent availability, and high smoke point. This variety high in oleic acid content is especially praised for its resistance to oxidation and increased stability, beneficial qualities of a natural oil. Canola oil is an ideal frying oil for both industrial and home cooking applications due to its high smoke point of over 450 F. It is additionally utilized as an ingredient in salad dressings, baked goods, and marinades.

Virgin is considered the natural/raw material with the characteristic color, flavor, and aroma. Refining removes these properties so the material is a lighter shade than the virgin material and often times clear, off-white, or white with little-to-no scent or flavor.
Refined, bleached (non-chemical process), deodorized. An "RBDW" product goes through a winterization ("W") process in addition to the RBD process.
Deodorized materials go through a non-chemical, high-vacuum process to reduce their natural aroma. While the aroma is not removed fully, a deodorized product’s aroma is less potent than the natural or unrefined variety.
