Organic yacon syrup is derived from the root of the perennial Smallanthus sonchifolius plant. This natural sweetener is light brown in color and has a consistency similar to molasses. Yacon's sugars are primarily composed of a component called "FOS", short for fructooligiosaccharides, which is a low-calorie, non-digestible carbohydrate that is sweet like sugar. Because of this, and its nutritional properties, the syrup is often used as a substitute for sugar, honey, molasses and other sweeteners. Yacon syrup can be used for cooking and baking and is believed to carry natural benefits.
