materials are generally handled in inert atmospheres and antioxidants are added to assist in the stabilization of the oil. The peroxide value, or a measure of the byproducts produced through the reaction of unsaturated fatty acids with oxygen, is generally the method used to determine stability as it is technically difficult to measure the actual omega-3 content in an oil once it is mechanically bound to the substrate.
With full knowledge of these limitations, Jedwards International has developed partnerships with contract drying facilities in order to “dry” our oils upon demand. We feel confident that we can provide companies seeking oil powders viable and stable options for use in their formulations.
The dietary supplement and food industry have seen a growing demand for oils in a dry or “powder” form. It is believed that a powder can be better utilized in formulations for dry mixes, tablets, and as a food additive. Whether this is true or not is a matter of opinion. Essentially, there are two basic method for drying an oil. First, the oil can be dried on a simple substrate usually some sugar based material or secondly, the oil can be sealed in extremely small capsules of gelatin in a process know as microencapsulated. Additionally, both methods can be used in tandem.
There are two major technical issues with oil powders: stability and load. In the powder form the oil’s surface area or the area exposed to air is increase by several orders of magnitude. As a result if the oil is not carefully protected it will be extremely prone to oxidation. With oxidation, the oil powder will go rancid and as a result pick up substantial odor as well as experience a reduction in unsaturated fatty acid content (such as omega-3 fatty acids) as the fatty acid degrades. Any reduction in fatty acid content can be a problem as the “load” or the actual ratio of oil in the powder vs carrier is low. This is due to the fact that load is traded for increased stability.
